Curry chicken salad

  • 1/2 cup mayonnaise
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp yellow curry powder
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 3 cooked crockpot chicken breasts cut into bite-size chunks*
  • 1 tart apple, peeled and cut into bite-sized pieces**
  • 2/3 cup chopped celery
  • 1/2 cup roasted salted cashews
  • 1/3 cup raisins
  • 1/4 cup sliced chives
